Nutella Cheescake - Nigella Lawson

World Nutella Day!

50 grams Digestive biscuits (For the chocoholics out there, you could even use chocolate biscuits)

75 grams unsalted butter soft

400 grams Nutella at room temperature

100 grams Hazelnuts toasted and chopped

500 grams cream cheese at room temperature

60 grams Icing sugar

Chocolate Pouring Sauce:

700grams dark chocolate

2 tablespoons heavy cream

4 tablespoons powdered sugar, sifted

4-5 tablespoons water, warm

Break the digestives into the bowl of a processor, add the butter and a 15ml tablespoon of Nutella, and blitz until it starts to clump. Add 25g of the hazelnuts and continue to pulse until you have a damp, sandy mixture.

Tip into a 23cm round springform and press into the base either using your hands or the back of a spoon. Place in the fridge to chill.

Beat the cream cheese and icing sugar until smooth and then add the remaining Nutella to the cream cheese mixture, and continue beating until combined.

Take the springform out of the fridge and carefully smooth the Nutella mixture over the base. Scatter the remaining 75g of chopped hazelnuts on top to cover and place the tin in the fridge for at least four hours or overnight. Serve straight from the fridge for best results

Place chocolate and heavy cream in a bowl over simmering water. Let chocolate and cream sit for 2-3 minutes to melt without stirring. Then slowly stir mixture to combine. Add powdered sugar and mix to combine. Add water 1 tablespoon at a time, mixing after each addition until pouring consistency is reached. Set aside and let sauce cool to warm.

Nutella Doughnuts - Forever Baking

World Nutella Day!

250g plain flour

30g caster sugar

110g caster sugar for coating

1 tsp salt

2 tsp dried yeast

2 eggs

zest of half a lemon

75ml warm water

65g butter, softened and cut into small squares

400 ml vegetable oil

Put all the ingredients for the doughnuts, except the butter, into the bowl of a free standing mixer fitted with the dough hook. Work on a low speed for about 4 minutes, until combined and  the dough is elastic.

While the mixer is still running, add the butter piece by piece, until incorporated. You should no be able to see any butter . This will take about 6 minutes.

Scrape down the sides of the bowl and cover with cling film. Set it aside in a warm place to rise and double in size.

When the dough has risen, punch it down, and put onto a well-floured surface. Gently pat down the dough into a square about 1cm thick and cut out 12 doughnuts using a 5cm round cutter.
Place the doughnuts on a lined baking sheet, cover with cling film again, and set aside to rise for an hour or until the doughnuts to puffy.

When the doughnuts are finished their second rise,  they should look a little puffy.

Place about 3 inches of oil into a saucepan, heat the oil over a low flame, until it reaches 170C. If you don’t have a sugar thermometer, place a small piece of dough in the oil, and when it bubbles and rises to the surface, the oil should be the right temperature.

Fry the doughnuts a few at a time for about 1 minute each side or until they are golden brown.

Place the doughnuts on paper towels to soak the excuses oil, and  then toss them in the sugar.

Make a small hole on the side of the doughnuts and pipe some Nutella into each doughnut!
