  Onesie Packed Lunch Recipes The summer holidays are finally over. We know that getting back into the school morning routine is a tough one after six weeks off, so we're here to help you out by sharing some of our favourite yummy packed lunch recipes - after all, no one looks forward to eating soggy sandwiches! Pasta Salad - BBC Good Food  Pasta salad is a great (and healthy) sandwich alternative. There'll be no more morning madness to get the packed lunches made as this delicious dinner can be prepared the night before. Ingredients;
  • 2 tsp finely chopped red onion
  • 1 tsp caper
  • 1 tbsp pesto
  • 2 tsp olive oil
  • 185g can of tuna in spring water, drained
  • 100g leftover pasta shapes
  • 3 sundried tomatoes, chopped
Method ; Mix the onion, capers, pesto and oil. Flake the tuna into a bowl with the pasta and tomatoes, then stir in the pesto mix. Chicken Roll-ups - BBC Good Food  Using wraps instead of bread is a great way to mix up your usual sandwich. These Chicken roll-ups aren't just healthy, but they are also super easy to make, allowing your children to try doing it themselves. Ingredients; 1 wrap or tortilla 1-2 tbsp houmous 3 fat slices cooked chicken breast ¼ avocado, taken out of its skin 3 cherry tomatoes cheddar, grated to make about 1 tbsp Method; Put a wrap on a board or plate. Spread the houmous onto the middle of it using a spoon or butter knife. Tear up the chicken (or ask a grown-up helper to do this) and put it in a line down the middle of the wrap. Chop the avocado with a butter knife and put it next to the chicken. Squish the tomatoes onto the wrap by squeezing them and tearing them in half (they might squirt, so mind your clothes). Sprinkle on some cheese. Roll up the wrap, press it down firmly and cut it in half. Chocolate Flapjacks  No packed lunch is complete without a delicious sweet-treat! These Chocolate flapjacks are full of slow burning carbs, keeping your little ones going throughout the afternoon. This Flapjack Recipe cuts into 8 bars - that's one flapjack for everyday with some to spare, making it the perfect Sunday afternoon activity before a busy week back at school. Ingredients;
  • 50g butter
  • 50g clear honey
  • ½ quantity honey crunch granola (see 'Goes well with')
  • 100g plain chocolate, half chopped into small chunks, half melted
Method; First make the Honey crunch granola with almonds & apricots. You'll need half the granola for this recipe. Heat oven to 190C/170C fan/gas 5 and line a baking tin (15 x 20cm, or 18cm square) with baking parchment. Melt the butter and honey together in a large pan. Stir in the granola and chocolate chunks, making sure they are all well coated. Tip the flapjack mix into the tin and press down very firmly (a potato masher is a good tool to use here). Cover with foil or more baking parchment, then bake for 25-30 mins. Leave to cool in the tin, then drizzle over the melted chocolate. Once set, cut into 8 portions. Store securely in an upright container. Make back to school lunchtimes more exciting by trying out these yummy recipes!
