Onesie Snuggly Soup Recipes   With the cooler Autumn weather to set in this weekend, we've put together 3 of our favourite autumn soup recipes - and designs to make sure you're warmed all the way through! Onesie Snuggly Soup RecipesIngredients; - 3 cups of well-washed, sliced leek (about 2 leeks) - 1 pound of raw pumpkin chunks, or substitute winter squash - Salt and pepper to taste - 1 cup of yoghurt, sour cream, or cream - Olive oil for drizzling (optional) Step 1: In a large saucepan, cover the pumpkin and leeks with a quart (4 cups) of water. Bring to a boil, then reduce to a simmer and cook until the pumpkin is soft, 15 to 20 minutes Step 2: Transfer soup to a food processor or blender, or pass through a food mill. Return to the pot and season to taste with salt and pepper. Step 3:  Remove from heat and stir in yogurt, sour cream, or cream. Or, serve in bowls with a dollop in the middle of each soup bowl. Drizzle with olive oil and serve with crusty bread.   Onesie Snuggly Soup RecipesIngredients; -1 1/2 tablespoons of olive oil -1 three-pound butternut squash, peeled, seeded, and cut into 2-inch chunks -1 softball-sized sweet vidalia onion, cut into chunks or rings -1 head of garlic, cloves separated and peeled -3 1/2 cups of stock, divided -Salt and pepper -1 or 2 tablespoons of cream or unsalted butter (optional) Step 1: Preheat oven to 350°F. Toss squash, onion and garlic cloves with 1 to 2 tablespoons olive oil; spread on glass baking dish and pour 1 cup stock over the top. Sprinkle with 1/2 teaspoon salt. Step 2: Bake at 350ºF for 1 1/2 hours or until fairly soft and a little caramelized-looking; check on the pan every 20 minutes or so and if necessary, add additional liquid to keep it from scorching to the bottom of the pan. Stir once during cooking. Step 3: Add squash, garlic, onion, and any liquid from baking dish into a large Dutch oven or stockpot. Add 2 1/2 cups stock and 1/2 teaspoon each salt and pepper to the pot, and cook over medium-low heat for at least 20 minutes. Step 4: Purée all ingredients in a blender. Add back to pot, stir in cream or butter and adjust salt and pepper to taste. Onesie Snuggly Soup RecipesIngredients; - 600g of mixed mushrooms - olive oil - 1 onion, peeled and finely sliced - 2 sticks of celery, trimmed and finely sliced - 3 cloves of garlic, peeled and sliced - a few sprigs of fresh flat-leaf parsley, leaves picked and chopped, stalks finely chopped - a few sprigs of fresh thyme, leaves picked - 1.5 litres of organic chicken or vegetable stock - sea salt - freshly ground black pepper - 75 ml single cream - 4-6 slices ciabatta bread Step 1: Peel off any tough outer skins of the mushroom caps and throw them away, then slice the mushrooms finely. Heat a large saucepan over a medium heat and pour in a splash of olive oil. Add the onion, celery, garlic, parsley stalks, thyme leaves and mushrooms, place a lid on top and sweat gently until softened. Step 2: Spoon 4 tablespoons of mushrooms out of the pan and put to one side. Pour the stock into the pan and bring to the boil. Turn the heat down and simmer for 15 minutes. Season with salt and pepper, then whiz with a hand-held blender until smooth. Pour in the cream, bring just back to the boil, then turn off the heat. Step 3: Toast the slices of ciabatta in a hot griddle pan, then top with most of the reserved mushrooms and drizzle with olive oil. Spoon the soup into deep, individual bowls, garnish with the chopped parsley and remaining mushrooms, and serve with the ciabatta crostini.   Our snuggly onesies will keep you warm on the outside while these delicious soups will keep you warm on the inside.
